I'm not much of a cook, but this year I wanted to make something for Thanksgiving. I totally procrastinated. I started looking for an easy recipe on Wednesday afternoon and came across the Cranberry Brie Empanadas on QueRicaVida.com.

Instead of using pie dough, I went the 'easier' route and bought turnover discs from Goya at the supermarket. I also used two cans of Ocean Spray Cranberry and one pound of brie cheese for 18 empanadas.
I've made beef empanadas before - but this was my first time baking them instead of frying them.
